In 2015, Uncle Wayne’s Gourmet started mainly as a one person operation in Southeast Arizona. Uncle Wayne’s wife, Toni, was approached by some rancher friends to make a rub so they could have an “add on” product line to sell with their meats. After a few attempts Toni wasn’t happy with the results. So, Uncle Wayne gave it a go, and hit on two recipes that were what the ranchers were looking for. Those recipes were sold to the ranchers.
Realizing there might be a business opportunity, Uncle Wayne kept trying different recipes. And on the 6th try he created the “winner”! The perfect combination of 6 ingredients that has become the foundation, or the base recipe, of most of Uncle Wayne’s Gourmet Seasoning Salt and Spice Company’s blended products.
Today, Uncle Wayne’s Gourmet has over 20 different labels. We have blended seasoning salts in Green and Red Chile, Lime Chiltepin, Chipotle Steak, Blood Mary Seasoning, Lime Garlic Seasoning, and Himalayan Pink Garlic Salt. There are two desert blends, Apple Pie Spice and Pumpkin Spice. Also there are two, single ingredient products, Himalayan Pink Salt and Tellecherry Black Pepper.

The Green Family starts with green chili powder from New Mexico. There is a choice of mild or hot flavors. The mild goes great on everything all the time. It is a favorite of most all of Uncle Wayne’s Gourmet fans. The flavor of the hot green chili seasoning salt is the same as the mild green, but leaves that tingling feeling in your mouth a little longer than the green chili.

The Red Family is made up of 3 flavors and 1 cousin flavor. We start with the mild red. Of course the flavor differs from the green chili. The red chili seasoning salt pears well with many items, your imagination is the limit. The next two products differ by the amount of Habanero that is used. Where all 3 of the reds are the same is in the flavor, only the heat level is different.

Spicy Bloody MarySeasoning
The red family’s cousin is the Bloody Mary Seasoning. The difference is the amount of Habanero, the Tellicherry Pepper is ground a little finer and there is some celery seed added.
This is very unique to the Uncle Wayne’s Gourmet product line. Although it shares the amazing blend of the 6 ingredients in the signature flavor, the Himalayan Pink Salt and Tellicherry Pepper are SMOKED. Then the Chipotle Powder is added. The result is pure perfection. The heat level is somewhere between a mild and medium.
Hot Lime ChiltepinSeasoning Salt
The Lime Chiltepin is a shining star in the line up. The wonderful burst of lime flavor coupled with the amazing heat and flavor of the Chiltepin pepper makes this one a winner. It’s great on poultry, pork, hamburgers or anything you dare put it on. It is crazy amazing on mangos!
Lime GarlicSeasoning Salt
Lime Garlic is a great product when you want something a little different and are not looking for heat. It has 4 ingredients, lime powder, garlic granules, a small amount of Tellicherry Pepper and Himalayan Pink Salt. Use this seasoning instead of garlic salt to change things up a little.

Himalayan PinkOrganic Garlic Salt
This product is by far the best garlic salt you will ever use. It is Uncle Wayne’s own recipe, it’s simple, it’s clean. Two ingredients, Himalayan Pink Salt and organic garlic granules. Once you start using this garlic salt, you will start to panic when you are about to run out. True story, I have several customers that do just that.
Himalayan Pink SaltSeasoning
Mined in the Himalayan mountains where it’s said to have been for 250 million years. No matter how long it’s been there it was long before mankind decided it was a good idea to start polluting the earth. It is no doubt the purest salt on earth. Himalayan Pink salt has 84 trace minerals, many of the same minerals that we have in our own bodies. It is the only salt used by Uncle Wayne’s Gourmet.
Tellicherry Ground PepperSeasoning
The two most common black peppers used in North America are Tellicheery and Malabar. These peppers are graded by the size of the peppercorn. The larger the peppercorn the better the aroma and the better the flavor. The most common of the two is Malabar. Malabar is the least expensive pepper you find on the shelf at the grocery store the big spice companies put in the square metal cans. Tellicherry pepper is the larger size peppercorn that has a flavor and aroma far superior to the Malabar. It is arguably the Chefs choice of pepper in North America. It is also the only black pepper Uncle Wayne’s Gourmet uses.

Applie Pie SpiceSeasoning
The Apple Pie Spice is a cinnamon dominate spice. It is of course great for apple pie, but also things like home made apple sauce, flavor in your smoothie, or cinnamon accent on cookies. Anything that calls for cinnamon, use Uncle Wayne’s Gourmet Apple Pie spice instead. The blend of Celyon Cinnamon, all spice, ginger and nutmeg will give a much more dynamic medley of flavor.
Pumpkin Spice has the same list of ingredients but a very different recipe. Uncle Wayne’s Gourmet Pumpkin Spice has a ginger dominate flavor profile. Ceylon, or "true cinnamon," comes from Sri Lanka and southern India. It has a delicate mild sweet flavor that works well in desserts. Organic Ceylon Cinnamon is the only cinnamon used in Uncle Wayne’s Gourmet products.
Organic Poultry SeasoningSeasoning
Uncle Wayne’s Poultry Seasoning is a wonderful blend of organic ingredients. The obvious use for this one is chicken, turkey, and game hens. You can use it in some soups or stews or to flavor some white rice for those times you may want a meatless meal.

I have been using Uncle Wayne’s Gourmet Seasonings for quite some time now. I started out with the Mild Green Chili Seasoning Salt, excellent, excellent product! I’ve never stopped using it. His wife turned me onto the Lime Chiltepin, which I now use to rim my margarita glass. Another excellent product. Then I started using the Chipotle Steak Seasoning, which I use in my Chili. I can’t get enough of it. I will never, ever stop using this product. I’m Chef Don Atkins, Bemo’s Ol’ Joe’s Food Truck, and without Uncle Wayne’s products I’d be lost.
